8 ounces of ground beef
10 ounces of elbow pasta
¾ cup cheddar cheese, shredded
1 tablespoon olive oil
2 cloves garlic, minced
1 onion, diced
4 cups chicken broth
1 can diced tomatoes
¾ cup canned kidney beans
¾ cup canned white kidney beans
2 teaspoons chili powder
1 teaspoon cumin
2 tablespoons fresh parsley leaves
salt and pepper to taste

Heat the olive oil on a large skillet on high heat. Once heated, add onion and garlic. Stir for about 30 seconds. Add ground beef and cook for the next 5 minutes or until brown. While cooking the ground beef, make sure to crumble it. Once done, drain excess fat.

Once excess fat is removed, add chicken broth, chili powder, beans, tomatoes, and cumin. Make sure to stir it so that the ingredients will mix evenly. Season it with salt and pepper according to your desired taste. Stir it for about 3 minutes before adding the pasta. Continue stirring until it boils. Once it boils, cover the skillet and reduce the heat. Let it simmer for about 15 minutes, or until the pasta is cooked.

Once cooked, remove it from heat and pour it on a large serving dish. Top it with cheese and cover until the cheese melts. This should take about 2 to 3 minutes. Garnish it with parsley and serve.
